Organic Brown Rice Risotto

This recipe produces an organic brown rice risotto that will serve 4 people. This risotto makes a perfect winter dinner or a great side dish to any meal all year round.

Ingredients

  • 2 tablespoons of organic olive oil
  • 1 finely chopped organic onion
  • 1 finely chopped organic red capsicum
  • 1 cup of short grain organic brown rice
  • 1 finely clove of organic garlic
  • 1/2 teaspoon of ground organic turmeric
  • A pinch of organic coriander
  • 3 1/2 cups of chicken stock (preferably salt reduced)

Method

As this dish requires brown rice you will need to have soaked the brown rice overnight prior to cooking.

  1. Preheat your oven to around 220°c.
  2. Heat the oil in a large flameproof casserole dish or ovenproof saucepan over a medium heat.
  3. Add the onion and capsicum. After 3 or 4 minuets add the rice, garlic turmeric and coriander, then cook until the rice is coated with oil.
  4. Add the stock and bring to the boil.
  5. Cover the dish and place it in the preheated oven. Bake until the chicken stock is absorbed and the rice is just tender, this process should take around 55 minuets.

Before eating you should allow the dish to stand for 5 minuets, serve with a sprinkle of cheese.
